ABURI is a tasting menu restaurant where the precision of Japanese gastronomy meets the intensity of smoke and fire. Each dish is born from a deep respect for the product and a constant pursuit of highlighting its purity.
We use refined Japanese techniques, meticulously selected ingredients, and the transformative power of the grill to create an experience that is both subtle and profound, minimalist and deeply moving.




Sea and fire

Originally from Uruguay, Joaquín Duarte discovered his vocation at a young age while working at his family’s restaurant, La Otra Parrilla, a culinary landmark known for its wood-fired cooking in his hometown. It was there that his fascination with cooking—and particularly with fire—was born, an element that would deeply shape his culinary style.
In 2017, he moved to Barcelona to further his training, joining some of the city’s most prestigious restaurants. He began his journey with an internship at Disfrutar, and later became part of the team at Koy Shunka, one of Europe’s top references for Japanese cuisine.
For six years, he worked under the direction of chef Hideki Matsuhisa, a leading ambassador of Japanese gastronomy in Spain, from whom he inherited technique, discipline, and vision.
Later, he went on to lead the kitchen at IKOYA, Hideki’s latest project in collaboration with Grupo Sagardi. This restaurant, inspired by traditional Tokyo taverns, allowed Joaquín to consolidate his identity as a chef, exploring an authentic and direct style of cooking, focused on respect for the product and technique.
After nearly a decade of learning and evolving within Barcelona’s vibrant culinary scene, Joaquín decided to carve his own path together with his partner, Mizuki Ono—whom he met at Koy Shunka—bringing to life a new project that combines his roots, his experience, and a contemporary vision of fire and flavor through Japanese gastronomy.
